  1. Wash the spinach under cold water and remove tough stems. Slice the mushrooms, chop the onion, mince the garlic, and grate the ginger.

  3. Stir in garlic and ginger; cook for another minute until fragrant.
  4. Add sliced mushrooms to the pan; cook until tender (about 5 minutes).
  5. Add the spinach and allow it to wilt before pouring in coconut milk along with curry powder, salt, and pepper.
  6. Simmer on low heat for about 10 minutes before serving.
