  • 1 lb ground turkey
  • 1 cup bell peppers (diced, mixed colors)
  • 1 can (15 oz) black beans (drained and rinsed)
  • 1 cup corn (fresh or frozen)
  • 1 can (14.5 oz) diced tomatoes with green chilies
  • 1 cup shredded cheddar cheese
  • 2 tablespoon taco seasoning
  • 1 tablespoon olive oil
  • green onions (for garnish)

Method
 

  1. Preheat your oven to 375°F (190°C). Lightly grease a large baking dish.
  2. In a skillet over medium heat, heat olive oil. Add ground turkey and cook until browned, about 5–7 minutes.
  3. Stir in the bell peppers, corn, black beans, diced tomatoes, and taco seasoning. Simmer for 5 minutes.
  4. Transfer mixture to the baking dish, top with cheddar cheese.
  5. Bake for 25–30 minutes or until bubbly and golden. Broil for an additional two minutes for extra crispiness.
  6. Let cool slightly and garnish with green onions before serving.
