Ingredients
  

  • 4 fillets salmon (6 oz each)
  • 4 cloves garlic minced
  • ¼ cup lemon juice freshly squeezed
  • ½ cup butter unsalted
  • 2 tablespoon olive oil extra virgin
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 bunch asparagus (about 1 lb)
  • 1 cup cherry tomatoes

Method
 

  1. Preheat your oven to 400°F (200°C) and line a sheet pan with parchment paper.
  2. Pat the salmon dry and season with salt and pepper. Place on the sheet pan.
  3. In a small bowl, melt butter and mix in minced garlic and lemon juice.
  4. Drizzle half of the garlic butter over the salmon. Toss asparagus and cherry tomatoes in the remaining mixture before placing them around the salmon.
  5. Roast for 15-20 minutes until salmon flakes easily with a fork.
  6. Serve immediately, drizzling any remaining sauce over the dish.
