Meatball Preparation
  1. In a large bowl, mix together ground beef, breadcrumbs, eggs, parsley, garlic, salt, and pepper. Form into small meatballs (about 1 inch).
  2. Heat olive oil in a large pot over medium heat. Brown the meatballs on all sides for about 5 minutes; remove and set aside.
Soup Preparation
  1. In the same pot, sauté onions and carrots until onions are translucent (about 5 minutes).
  2. Add chicken broth to the pot and bring to a simmer. Return meatballs to the pot along with any juices.
  3. Simmer for 20 minutes, stirring occasionally.
