Carrots and Marinade
  • 2 lbs carrots, peeled
  • ¼ cup olive oil
  • 3 tablespoon pure maple syrup
  • 2 tablespoon dijon mustard
  • 1 teaspoon garlic powder
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • ¼ cup parsley, finely chopped

Method
 

Cooking Instructions
  1. Preheat the oven to 400 F.
  2. Cut the carrots into 1" pieces.
  3. Toss the carrots in a bowl with olive oil, maple syrup, dijon mustard, parsley, garlic powder, salt, and black pepper. Mix well until they’re all coated.
  4. Transfer the carrots to a parchment-lined sheet pan. Pour any remaining marinade over the carrots.
  5. Roast for 45-50 minutes, flipping halfway through.
  6. Garnish with extra parsley when ready to serve and add a pinch of salt if needed.
