Ingredients
  

  • 8 sheets Rice paper wrappers (Round, 22 cm diameter)
  • 1 cup Cooked shrimp (Peeled and deveined)
  • 1 cup Julienned carrots
  • 1 cup Cucumber (Julienned)
  • 1 cup Bell pepper (Julienned)
  • 1 cup Fresh herbs (Mint and cilantro)
  • 3 tablespoons Soy sauce
  • 1 tablespoon Rice vinegar
  • 1 teaspoon Sesame oil
  • 1 teaspoon Honey (Optional)

  • Bowl for soaking

Method
 

Preparation
  1. Soak each rice paper wrapper in warm water for about 10 seconds until pliable.
  2. Lay the softened wrapper flat on a clean surface.
  3. In the center of the wrapper, layer a few shrimp, carrots, cucumber, bell pepper, and fresh herbs.
  4. Drizzle with soy sauce, rice vinegar, sesame oil, and honey if using.
  5. Fold the sides of the wrapper over the filling and roll it tightly from the bottom up.
  6. Repeat with remaining ingredients.
  7. Serve immediately, or chill in the refrigerator before serving.
