  • 1 lb lean ground turkey
  • 1 cup uncooked long-grain rice
  • 1 medium onion, chopped
  • 1 cup bell peppers (red/yellow/green), chopped
  • 2 cloves garlic, minced
  • 2 cups low-sodium chicken broth
  • 10.5 oz cream of mushroom soup

Method
 

Cooking Directions
  1. Preheat oven to 350°F (175°C) and spray a baking dish with nonstick cooking spray.
  2. In a skillet over medium heat, add olive oil and sauté onions and bell peppers until soft (about 5 minutes).
  3. Add ground turkey to the skillet and cook until browned (approximately 7 minutes).
  4. In a large bowl, mix the cooked turkey mixture with uncooked rice, garlic, chicken broth, and cream of mushroom soup until well combined.
  5. Pour the mixture into the prepared baking dish, cover with foil, and bake for 45 minutes.
  6. Remove foil and bake for an additional 10 minutes until bubbly and golden brown.
