- Remove salmon fillets from refrigerator 15 minutes before cooking. Pat completely dry and season both sides with salt, pepper, and paprika.
- Heat olive oil in a large oven-safe skillet over medium-high heat.
- Carefully place salmon skin-side up in hot pan. Cook for 4-5 minutes without moving it.
- Flip salmon carefully and cook another 3-4 minutes until cooked through. Remove to plate and tent with foil to keep warm.
- Reduce heat to medium. Add 1 tablespoon butter to the same pan. Add garlic and thyme, cooking for 30 seconds until fragrant.
- Add white wine if using and let reduce by half.
- Add heavy cream and cream cheese, whisking until smooth. Bring to a gentle simmer.
- Stir in Parmesan cheese until melted.
- Add spinach in handfuls, stirring gently until wilted. Season sauce with salt, pepper, and lemon juice to taste.
- Return salmon to pan, nestle into sauce. Add remaining butter and red pepper flakes if using. Let meld together for 1-2 minutes.
