Ingredients
  

Crust
  • 1 cup all-purpose flour
  • ¼ cup granulated sugar
  • ½ cup unsalted butter cold and cubed
  • 1 large egg yolk
  • 2-3 tablespoons cold water
Custard Filling
  • 1 cup milk whole
  • ¼ cup granulated sugar
  • 2 tablespoons cornstarch
  • 2 large egg yolks
  • 1 teaspoon vanilla extract
Toppings
  • 1 cup mixed fresh fruits e.g., strawberries, kiwi, blueberries
  • 1 tablespoon apricot jam for glaze

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, combine flour and sugar. Cut in butter until mixture resembles coarse crumbs. Add egg yolk and cold water, mixing until a dough forms.
  3. Roll out the dough and fit it into a tart pan. Prick the bottom with a fork and bake for 15 minutes until lightly golden.
  4. In a saucepan, whisk together milk, sugar, cornstarch, and egg yolks. Cook over medium heat until thickened, stirring constantly. Remove from heat and stir in vanilla extract.
  5. Pour the custard into the cooled tart shell and let it cool.
  6. Once cooled, arrange the mixed fruits on top of the custard.
  7. Heat apricot jam in a small saucepan until melted and brush it over the fruits for a glaze.
