  • 4 ears fresh sweet corn
  • 2 ripe avocados, diced
  • 1 pint cherry tomatoes, halved
  • 1 small red onion, finely diced
  • ¼ cup fresh cilantro, chopped (or parsley)
Dressing
  • 2 tablespoons extra virgin olive oil
  • 2 juices of limes
  • Salt to taste
  • Pepper to taste

Method
 

Cooking Process
  1. Shuck the corn and rinse the kernels under cool water.
  2. Boil the corn in a pot of water for 5-7 minutes until tender but crisp. Cool before slicing off the kernels.
  3. While the corn cools, dice the avocados, halve the cherry tomatoes, and finely chop the red onion.
  4. In a large mixing bowl, combine corn kernels, avocado chunks, cherry tomatoes, red onion, and cilantro.
  5. In a small bowl, whisk lime juice with olive oil, salt, and pepper. Drizzle over the salad and toss gently to combine.
  6. Serve immediately or chill for 30 minutes to enhance flavors.
