  • 1 clove garlic halved crosswise
  • 1 cup light beer
  • 3 cups sharp cheddar cheese grated
  • 1 cup Emmental cheese grated
  • 2 tablespoons cornstarch
  • 1 teaspoon Worcestershire sauce
  • ½ teaspoon dry mustard
  • teaspoon ground nutmeg
  • Dippers cubes of French bread, apples, pears, peppers, blanched broccoli, etc...

Method
 

Cooking Instructions
  1. Rub the inside of a heavy pot or saucepan with the cut sides of the garlic, then discard the garlic.
  2. Add the beer to the pot and bring it to a simmer over moderate heat.
  3. Coat the grated cheese with the cornstarch. Gradually add the cheese to the pot, stirring constantly in a zigzag pattern to prevent the cheese from balling up. Continue until the cheese is just melted and creamy, making sure it does not boil.
  4. Stir in the Worcestershire sauce, dry mustard, and ground nutmeg. Bring the fondue to a simmer and cook, stirring, until thickened for about 5-8 minutes. Avoid overcooking as it may get stringy.
  5. Transfer the fondue to a fondue pot set over a flame.
