  • 3 cups Yukon gold potatoes peeled and diced
  • 1 cup Andouille sausage sliced
  • 1 medium onion chopped
  • 3 cloves garlic minced
  • 4 cups low-sodium chicken broth
  • 1 cup heavy cream
  • 2 tablespoons Cajun seasoning
  • Salt to taste
  • Pepper to taste
  • 2 tablespoons olive oil

  1. Prepare your ingredients by peeling and dicing the potatoes, chopping the onion, and mincing the garlic.
  2. In a large pot over medium heat, add olive oil and sauté the onions until translucent. Add garlic and cook for an additional minute.
  3. Stir in sliced sausage and brown slightly for about 5 minutes.
  4. Add diced potatoes and chicken broth; bring to a gentle boil. Reduce heat and simmer until potatoes are tender, approximately 15 minutes.
  5. Stir in heavy cream and Cajun seasoning; let simmer for another 5 minutes before serving.
