Prepping the Oven & Pastry
  1. Preheat your oven to 375°F (190°C). Lightly grease a standard 24-cup mini muffin tin with melted butter or non-stick spray.
  2. Unroll the cold puff pastry onto a lightly floured surface. Using a pizza cutter or sharp knife, slice the dough into 24 equal squares (a 4x6 grid).
Assembling the Holiday Bites
  1. Gently press one pastry square into each mini muffin cup, allowing the corners to point upward above the rim.
  2. Place one cube of brie cheese into the center of each pastry cup.
  3. Top each cheese cube with 1 generous teaspoon of whole-berry cranberry sauce and a sprinkle of chopped pecans.
Baking to Golden Crunch
  1. Bake at 375°F (190°C) for 14 to 16 minutes until the puff pastry edges puff tall and turn deeply golden-brown and the brie is thoroughly melted and bubbling.
  2. Remove from the oven and let cool in the pan for 5 minutes so the molten cheese sets slightly.
Garnish & Festive Plating
  1. Use a small offset spatula or butter knife to gently lift the brie bites onto a serving platter.
  2. Garnish each bite with a tiny rosemary needle and drizzle warm honey over the entire platter right before serving.
