Ingredients

Main Ingredients
  • 24 large Medjool dates pitted
  • 4 oz goat cheese softened
  • 12 slices applewood smoked bacon halved crosswise into 24 pieces
  • 2 tablespoon honey for drizzling
  • 1 tablespoon fresh rosemary finely chopped
  • ½ teaspoon flaky sea salt for finishing
  • 24 pieces toothpicks soaked

Method

Preparation & Baking Steps
  1. Preheat oven to 400°F (200°C). Line a large rimmed baking sheet with parchment paper or place a wire rack directly on the sheet for extra-crisp bacon.
  2. Using a small paring knife, slice each Medjool date lengthwise to create an opening and remove the pit (if not pre-pitted). Gently open the date pocket.
  3. Spoon about 1 teaspoon of creamy goat cheese into the center cavity of each date, gently pressing the sides together to enclose the filling.
  4. Wrap one half-slice of bacon snugly around the stuffed date. Secure the bacon with a pre-soaked wooden toothpick poked through the center.
  5. Arrange wrapped dates seam-side down on the prepared baking sheet. Bake for 18-20 minutes, flipping halfway through at the 10-minute mark, until the bacon is deep golden-brown, rendered, and shatteringly crispy.
  6. Transfer hot bacon dates to a paper towel-lined plate for 1 minute to drain excess drippings. Arrange on a serving platter, drizzle generously with warm honey, and garnish with fresh chopped rosemary and flaky sea salt. Serve warm!
