  • 8 oz fresh mushrooms (cremini or shiitake), sliced
  • 1 cup small pasta (orzo or ditalini)
  • 1 cup heavy cream
  • 4 cups vegetable broth
  • 1 medium yellow onion, diced
  • 3 cloves garlic, minced
  • 2 teaspoon dried thyme
  • Salt and pepper to taste
  • 2 tablespoon olive oil

  1. In a large pot over medium heat, heat olive oil and sauté diced onions until translucent (3-4 minutes). Add minced garlic and cook until fragrant (1 minute).
  2. Add sliced mushrooms and sauté until browned (5-7 minutes).
  3. Pour in vegetable broth, thyme, salt, and pepper. Bring to a gentle boil then reduce heat to simmer.
  4. Stir in pasta and cook according to package instructions (8-10 minutes).
  5. Once pasta is al dente, stir in heavy cream and adjust seasoning as needed. Simmer for an additional 2 minutes.
  6. Serve hot, garnished with fresh herbs if desired.
