Ingredients

  • 4 pieces boneless, skinless chicken breasts (about 1.5 lbs)
  • 4 cloves fresh garlic minced
  • 8 oz cremini or button mushrooms sliced
  • 1 cup heavy cream
  • 1 cup low-sodium chicken broth
  • 2 teaspoon fresh thyme chopped
  • Salt to taste
  • Pepper to taste
  • 2 tablespoon olive oil

Equipment

  • skillet

Method

Cooking Steps
  1. Gather all ingredients. Mince garlic and slice mushrooms.
  2. In a large skillet over medium heat, add olive oil. Season chicken breasts with salt and pepper, then cook for about 5 minutes on each side until golden brown. Remove from skillet and set aside.
  3. In the same skillet, sauté mushrooms and garlic until tender (about 5 minutes). Stir frequently.
  4. Pour in chicken broth and add thyme; scrape any browned bits from the pan. Let simmer for a couple of minutes before stirring in heavy cream.
  5. Return chicken to the skillet, ensuring it’s coated in sauce. Cover and reduce heat to low; simmer for about 10 minutes until chicken is fully cooked.
  6. Serve hot with rice or crusty bread.
