Ingredients

Soup Aromatics & Base
  • 4 tablespoon unsalted butter
  • 1 medium yellow onion finely diced
  • 3 medium carrots sliced into ¼-inch rounds
  • 3 stalks celery sliced into ¼-inch pieces
  • 4 cloves fresh garlic minced
  • ⅓ cup all-purpose flour for roux
Broth, Chicken & Cream
  • 5 cups low-sodium chicken broth
  • 1 lb Yukon Gold potatoes diced into bite-sized cubes
  • 3 cups shredded cooked chicken
  • 1 cup heavy cream
  • 1 cup frozen sweet peas
  • 1 cup sweet corn kernels
Herbs & Seasonings
  • 1 teaspoon fresh thyme
  • ½ teaspoon fresh rosemary
  • 1 teaspoon poultry seasoning
  • 1 teaspoon kosher salt
  • ½ teaspoon black pepper
  • 2 tablespoon fresh flat-leaf parsley

Method

Preparation & Cooking Steps
  1. Melt unsalted butter in a large Dutch oven or heavy-bottom stockpot over medium heat. Add the diced onion, carrots, and celery (the mirepoix). Sauté for 6 to 8 minutes until softened and fragrant.
  2. Stir in the minced garlic, fresh thyme, rosemary, and poultry seasoning. Cook for 60 seconds until intensely aromatic.
  3. Sprinkle the flour evenly over the vegetables. Stir constantly for 2 minutes to coat the aromatics and cook out the raw flour taste.
  4. Slowly pour in the chicken broth in a steady stream, whisking continuously to ensure a silky, lump-free emulsion. Add the diced Yukon Gold potatoes, salt, and black pepper.
  5. Bring the soup to a gentle boil, then reduce heat to medium-low. Simmer uncovered for 12 to 15 minutes, stirring occasionally, until the potatoes are tender when pierced with a fork.
  6. Stir in the shredded chicken, frozen sweet peas, corn, and heavy cream. Simmer gently for another 3 to 4 minutes until thoroughly warmed through and velvety thick.
  7. Taste and adjust salt or black pepper as needed. Ladle steaming bowls garnished with fresh parsley and serve with warm golden puff pastry biscuits or crusty sourdough.
