  • 1 lb boneless, skinless chicken breasts diced
  • 1 cup long-grain white rice uncooked
  • 4 cups chicken broth low sodium
  • 1 cup heavy cream
  • 1 cup carrots diced
  • 1 cup celery diced
  • 1 medium onion diced
  • 2 cloves garlic minced
  • 2 tablespoon olive oil
  • 1 teaspoon dried thyme
  • 1 teaspoon salt to taste
  • ½ teaspoon black pepper to taste

Method
 

Cooking the Soup
  1. In a large pot, heat olive oil over medium heat. Add diced onion, carrots, and celery. Sauté for about 5 minutes until softened.
  2. Add minced garlic and dried thyme, and cook for another minute until fragrant.
  3. Stir in the diced chicken and cook until no longer pink, about 5-7 minutes.
  4. Pour in the chicken broth and bring to a boil. Add the rice and reduce heat to a simmer. Cook for 15 minutes or until the rice is tender.
  5. Stir in the heavy cream, salt, and pepper. Cook for an additional 5 minutes until heated through.
  6. Serve hot, garnished with fresh herbs if desired.
