Ingredients
  

  • 1 package phyllo dough, thawed
  • 8 oz creamy goat cheese, softened
  • 1 cup dried cranberries, chopped
  • 2 tablespoon fresh rosemary, finely chopped
  • 4 tablespoon unsalted butter, melted

Method
 

  1. Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, blend softened goat cheese with chopped cranberries and rosemary until well combined.
  3. Layer three sheets of phyllo dough, brushing each layer with melted butter. Spoon filling onto one edge of the phyllo sheets, fold in the sides, and roll tightly.
  4. Place seam-side down on the prepared baking sheet and brush tops with remaining butter.
  5. Bake for 20-25 minutes until golden brown and crispy. Allow to cool slightly before serving.
