Ingredients
  

Rice Base
  • 1 cup Jasmine rice Rinsed
  • 1 cup Coconut milk Full-fat for creaminess
  • 1 cup Water
  • 1 teaspoon Salt
Optional Garnish
  • 2 tablespoons Chopped cilantro For garnish
  • 1 tablespoon Toasted coconut flakes For garnish

Method
 

Cooking the Rice
  1. In a medium saucepan, combine the rinsed Jasmine rice, coconut milk, water, and salt.
  2. Bring the mixture to a boil over medium-high heat.
  3. Once boiling, reduce the heat to low, cover, and simmer for 18-20 minutes or until the rice is tender and the liquid is absorbed.
  4. Remove from heat and let it sit, covered, for 5 minutes.
  5. Fluff the rice with a fork before serving.
Garnishing
  1. Serve the coconut rice warm, garnished with chopped cilantro and toasted coconut flakes if desired.
