Ingredients
  

Pancake Batter
  • 1 cup all-purpose flour
  • 2 tablespoon granulated sugar
  • 1 tablespoon baking powder
  • ½ teaspoon salt
  • 1 cup milk whole or buttermilk
  • 1 large egg
  • 2 tablespoon unsalted butter melted
Cinnamon Filling
  • ¼ cup brown sugar packed
  • 1 tablespoon ground cinnamon
  • 2 tablespoon unsalted butter softened
Cream Cheese Frosting
  • 4 oz cream cheese softened
  • ¼ cup unsalted butter softened
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract

Method
 

Prepare the Pancake Batter
  1. In a mixing bowl, whisk together the flour, sugar, baking powder, and salt.
  2. In another bowl, combine the milk, egg, and melted butter. Mix well.
  3. Pour the wet ingredients into the dry ingredients and stir until just combined.
Make the Cinnamon Filling
  1. In a small bowl, mix together the brown sugar, cinnamon, and softened butter until smooth.
Cook the Pancakes
  1. Preheat a griddle over medium heat and lightly grease it.
  2. Pour ¼ cup of pancake batter onto the griddle.
  3. Using a spoon, swirl the cinnamon filling on top of the pancake batter.
  4. Cook until bubbles form on the surface, then flip and cook until golden brown.
Prepare the Cream Cheese Frosting
  1. In a mixing bowl, beat together the cream cheese and butter until creamy.
  2. Add the powdered sugar and vanilla extract, mixing until smooth.
Serve
  1. Stack the pancakes on a plate and drizzle with cream cheese frosting.
