  • 1.75 cups almond milk
  • cup pure maple syrup
  • 2 large eggs
  • 2 tablespoon melted coconut oil or butter
  • 1 teaspoon pure vanilla extract

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C). Lightly grease an 8x8-inch or 9x9-inch ceramic baking dish with coconut oil or cooking spray.
  2. In a large mixing bowl, combine the rolled oats, diced apples, chopped pecans, ground cinnamon, nutmeg, baking powder, and sea salt. Stir until evenly distributed.
  3. Spread the dry oat and apple mixture evenly across the prepared baking dish.
  4. In a medium bowl or glass measuring pitcher, whisk together the almond milk, pure maple syrup, eggs, melted butter or coconut oil, and vanilla extract until completely blended.
  5. Pour the liquid mixture evenly all over the oats and apples in the baking dish. Gently tap the dish against the counter to ensure the milk settles down to the bottom.
  6. Bake uncovered in the preheated oven for 35 to 40 minutes, until the top is golden brown and the center is set to a slight bounce.
  7. Remove from oven and let cool for 5 minutes. Slice into squares and serve warm in bowls with an extra drizzle of maple syrup, toasted pecans, and a splash of cold milk or Greek yogurt.
