Ingredients

Chicken Wings
  • 2 pounds chicken wings drumettes and flats
Marinade
  • 2 tablespoons soy sauce for marinating
  • 1 tablespoon rice vinegar for marinating
  • 1 tablespoon hoisin sauce for marinating
  • 1 teaspoon five-spice powder for flavor
  • 1 teaspoon garlic powder for flavor
  • 1 teaspoon ginger powder for flavor
  • 1 teaspoon black pepper for seasoning
  • 1 tablespoon sesame oil for marinating
Coating
  • 1 cup all-purpose flour for coating
  • 1 cup cornstarch for extra crispiness
  • 1 teaspoon salt for seasoning
  • 1 teaspoon white pepper for seasoning
Frying
  • 4 cups vegetable oil for frying

Method

Marinate the Wings
  1. In a mixing bowl, combine soy sauce, rice vinegar, hoisin sauce, five-spice powder, garlic powder, ginger powder, black pepper, and sesame oil. Add the chicken wings and toss to coat. Cover and marinate in the refrigerator for at least 30 minutes.
Prepare the Coating
  1. In another bowl, mix together all-purpose flour, cornstarch, salt, and white pepper.
Coat the Wings
  1. Remove the wings from the marinade and let excess liquid drip off. Dredge each wing in the flour mixture, ensuring an even coating.
Fry the Wings
  1. Heat vegetable oil in a deep fryer to 350°F (175°C). Fry the wings in batches for about 8-10 minutes or until golden brown and crispy. Use tongs to turn them occasionally.
Drain and Serve
  1. Remove the wings from the oil and drain on paper towels. Serve hot with your favorite dipping sauce.
