Ingredients
  

Casserole Base
  • 4 large eggs
  • 1 cup milk
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon salt
Filling
  • 2 cups shredded cheese cheddar or Monterey Jack
  • 1 can diced green chilies drained
  • 1 cup cooked ground beef or turkey optional

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C). Grease a 9x13 inch baking dish.
  2. In a mixing bowl, whisk together eggs, milk, flour, baking powder, and salt until smooth.
Assemble Casserole
  1. Spread half of the egg mixture in the bottom of the prepared baking dish.
  2. Layer the shredded cheese, diced green chilies, and cooked meat (if using) evenly over the egg mixture.
  3. Pour the remaining egg mixture over the top, ensuring everything is covered.
Bake
  1. Bake in the preheated oven for 40-45 minutes, or until the casserole is set and golden brown on top.
  2. Let it cool for a few minutes before slicing and serving.

Notes

This casserole can be made ahead of time and stored in the refrigerator before baking. Just add a few extra minutes to the baking time if baking from cold.
