Ingredients
  

Chicken Scampi
  • 1 lb chicken breast cut into bite-sized pieces
  • 4 cloves garlic minced
  • ½ cup chicken broth
  • ½ cup heavy cream
  • ½ cup parmesan cheese grated
  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 1 teaspoon red pepper flakes optional
  • 1 tablespoon fresh parsley chopped for garnish
Garlic Parmesan Rice
  • 1 cup long-grain rice
  • 2 cups water
  • 2 tablespoon butter
  • 2 cloves garlic minced
  • ¼ cup parmesan cheese grated
  • 1 teaspoon salt
  • 1 teaspoon black pepper

Method
 

Prepare the Garlic Parmesan Rice
  1. In a saucepan, melt butter over medium heat. Add minced garlic and sauté until fragrant, about 1 minute.
  2. Add rice and stir to coat. Pour in water, add salt, and bring to a boil.
  3. Reduce heat to low, cover, and simmer for 18-20 minutes or until rice is tender and water is absorbed.
  4. Remove from heat, stir in parmesan cheese, and fluff with a fork.
Cook the Chicken Scampi
  1. In a skillet, heat olive oil and butter over medium-high heat. Add chicken pieces and cook until browned and cooked through, about 5-7 minutes.
  2. Add minced garlic and red pepper flakes, cooking for an additional 1-2 minutes until garlic is fragrant.
  3. Pour in chicken broth and heavy cream, stirring to combine. Bring to a simmer and cook for 3-5 minutes until sauce thickens slightly.
  4. Stir in grated parmesan cheese until melted and smooth. Adjust seasoning with salt and pepper if needed.
Serve
  1. Serve the chicken scampi over the garlic parmesan rice, garnished with fresh parsley.
