Ingredients
  

Main Ingredients
  • 1 lb boneless, skinless chicken breasts
  • 1 can black beans drained and rinsed
  • 1 can kidney beans drained and rinsed
  • 1 can diced tomatoes with green chilies
  • 1 cup chicken broth
  • 1 cup corn frozen or canned
  • 1 packet chili seasoning
Vegetables
  • 1 medium onion chopped
  • 1 medium bell pepper chopped
  • 2 cloves garlic minced

Method
 

Preparation
  1. Chop the onion, bell pepper, and garlic.
  2. Place the chicken breasts at the bottom of the crockpot.
  3. Add the chopped onion, bell pepper, and minced garlic on top of the chicken.
Cooking
  1. Add the black beans, kidney beans, diced tomatoes, corn, chicken broth, and chili seasoning to the crockpot.
  2. Stir to combine all ingredients.
  3. Cover and cook on low for 4 hours or until the chicken is cooked through and tender.
  4. Once cooked, shred the chicken using two forks and stir back into the chili.
Serving
  1. Serve hot, garnished with your choice of toppings such as cheese, sour cream, or cilantro.
