Preparation
- Chop the onion, bell pepper, and garlic.
- Place the chicken breasts at the bottom of the crockpot.
- Add the chopped onion, bell pepper, and minced garlic on top of the chicken.
Cooking
- Add the black beans, kidney beans, diced tomatoes, corn, chicken broth, and chili seasoning to the crockpot.
- Stir to combine all ingredients.
- Cover and cook on low for 4 hours or until the chicken is cooked through and tender.
- Once cooked, shred the chicken using two forks and stir back into the chili.
Serving
- Serve hot, garnished with your choice of toppings such as cheese, sour cream, or cilantro.
