Ingredients
  

Filling
  • 4 cups fresh cherries, pitted
  • 1 cup granulated sugar adjust based on sweetness of cherries
  • 2 tablespoons cornstarch
  • 1 teaspoon vanilla extract
  • 1 tablespoon lemon juice
Topping
  • 1 cup all-purpose flour
  • 1 cup granulated sugar
  • 1 tablespoon baking powder
  • ½ cup milk
  • ½ cup unsalted butter, melted
  • 1 teaspoon vanilla extract

Method
 

Prepare the Filling
  1. Preheat the oven to 350°F (175°C). In a mixing bowl, combine the pitted cherries, sugar, cornstarch, vanilla extract, and lemon juice. Mix well and set aside.
Make the Topping
  1. In another bowl, whisk together the flour, sugar, and baking powder. Stir in the milk and melted butter until just combined. Add the vanilla extract.
Assemble and Bake
  1. Pour the cherry mixture into a greased baking dish. Spoon the topping over the cherries evenly. Bake for 30-35 minutes or until the topping is golden brown and a toothpick comes out clean.
  2. Let cool for a few minutes before serving. Enjoy warm with ice cream if desired.
