Ingredients
  

Cake
  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 cup unsalted butter softened
  • 4 large eggs
  • 1 cup milk whole or 2%
  • 2 teaspoons baking powder
  • 1 teaspoon vanilla extract
  • 1 cup cherries pitted and halved
Frosting
  • 1 cup unsalted butter softened
  • 4 cups powdered sugar
  • 2 tablespoons milk
  • 1 teaspoon vanilla extract
  • 1 cup cherries for decoration

Method
 

Cake Preparation
  1. Preheat the oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a mixing bowl, cream together the softened butter and sugar until light and fluffy.
  3. Add the eggs one at a time, mixing well after each addition.
  4. Stir in the vanilla extract.
  5. In a separate bowl, combine the flour and baking powder.
  6. Gradually add the dry ingredients to the wet mixture, alternating with the milk, and mix until just combined.
  7. Fold in the halved cherries gently.
  8. Divide the batter evenly between the prepared pans and smooth the tops.
  9. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
  10. Allow the cakes to cool in the pans for 10 minutes, then transfer to a cooling rack to cool completely.
Frosting and Assembly
  1. In a mixing bowl, beat the softened butter until creamy.
  2. Gradually add the powdered sugar, alternating with the milk, and beat until smooth and fluffy.
  3. Once the cakes are completely cooled, place one layer on a serving plate and spread a layer of frosting on top.
  4. Place the second layer on top and frost the top and sides of the cake.
  5. Decorate with additional cherries on top.
  6. Slice and serve to enjoy!
