- Preheat oven to 375°F (190°C) and spray a baking dish with nonstick cooking spray.
- In a skillet over medium heat, cook chicken breasts in olive oil seasoned with salt and pepper for about 6-7 minutes per side until golden brown.
- Shred the cooked chicken and mix in garlic, half the cheese, enchilada sauce, cumin, chili powder, and sour cream in a large bowl.
- Fill each tortilla with the chicken mixture, roll them up tightly, and place seam-side down in the baking dish.
- Pour remaining enchilada sauce over the top and sprinkle with remaining cheese. Cover with foil and bake for 20 minutes; remove foil for the last 5 minutes to melt cheese.
- Serve hot with additional sauce drizzled on top.
