Ingredients
  

Grilled Vegetables
  • 2 cups bell peppers sliced
  • 1 cup zucchini sliced
  • 1 cup red onion sliced
  • 2 tablespoons olive oil for grilling
  • 1 teaspoon salt
  • 1 teaspoon black pepper
Guacamole
  • 2 ripe avocados mashed
  • 1 medium tomato diced
  • 1 small onion finely chopped
  • 1 tablespoon lime juice freshly squeezed
  • 1 teaspoon salt
  • 2 tablespoons cilantro chopped
Mexican Rice
  • 1 cup long-grain rice
  • 2 cups chicken broth
  • 1 medium tomato diced
  • 1 small onion chopped
  • 1 teaspoon garlic powder
  • 1 teaspoon cumin
  • 1 tablespoon olive oil

Method
 

Grilled Vegetables
  1. Preheat the grill to medium-high heat. Toss the sliced vegetables with olive oil, salt, and black pepper.
  2. Grill the vegetables for about 5-7 minutes, turning occasionally until they are tender and slightly charred.
Guacamole
  1. In a mixing bowl, mash the avocados. Add diced tomato, onion, lime juice, salt, and cilantro. Mix until combined.
  2. Taste and adjust seasoning if necessary. Serve immediately or cover with plastic wrap to prevent browning.
Mexican Rice
  1. In a pot, heat olive oil over medium heat. Add chopped onion and sauté until translucent.
  2. Add the rice and toast for 2-3 minutes. Stir in diced tomato, chicken broth, garlic powder, and cumin.
  3. Bring to a boil, then reduce heat to low, cover, and simmer for 20 minutes or until rice is cooked and liquid is absorbed.
