Ingredients
  

Rice Base
  • 4 cups cooked rice preferably day-old
Vegetables
  • 1 cup peas frozen or fresh
  • 1 cup carrots diced
  • 1 cup green onions chopped
Eggs
  • 4 large eggs beaten
Sauces and Seasonings
  • 3 tablespoons soy sauce or tamari for gluten-free
  • 1 tablespoon sesame oil
  • 1 teaspoon salt to taste
  • 1 teaspoon black pepper to taste

Method
 

Cooking the Eggs
  1. Heat a wok over medium-high heat and add a little oil. Pour in the beaten eggs and scramble until fully cooked. Remove from the wok and set aside.
Stir-frying the Vegetables
  1. In the same wok, add a bit more oil and stir-fry the peas, carrots, and green onions for about 3-4 minutes until tender.
Combining Ingredients
  1. Add the cooked rice to the wok and stir-fry for another 3-4 minutes, ensuring the rice is heated through.
  2. Pour in the soy sauce and sesame oil, mixing well to combine all ingredients.
  3. Add the scrambled eggs back into the wok, season with salt and pepper, and stir to combine.
Serving
  1. Serve hot, garnished with additional green onions if desired.
