Ingredients
  

Casserole Base
  • 1 lb ground beef lean
  • 1 cup onion chopped
  • 1 cup bell pepper chopped
  • 2 cloves garlic minced
  • 1 cup rice uncooked
  • 2 cups beef broth
  • 1 can diced tomatoes 14.5 oz
  • 1 cup cheddar cheese shredded
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon paprika

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. In a skillet over medium heat, cook the ground beef until browned. Drain excess fat.
  3. Add chopped onion, bell pepper, and garlic to the skillet. Sauté until vegetables are tender.
  4. Stir in uncooked rice, beef broth, diced tomatoes, salt, pepper, and paprika. Bring to a boil.
  5. Remove from heat and transfer the mixture to a casserole dish.
  6. Cover with shredded cheddar cheese.
Baking
  1. Cover the casserole dish with foil and bake in the preheated oven for 30 minutes.
  2. Remove the foil and bake for an additional 15 minutes, or until the cheese is bubbly and golden.
  3. Let it cool for a few minutes before serving.
