Ingredients
  

For the Shrimp
  • 1 pound shrimp peeled and deveined
  • 1 cup buttermilk
  • 1 cup panko breadcrumbs
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 2 tablespoons vegetable oil for frying
For the Bang Bang Sauce
  • ½ cup mayonnaise
  • ¼ cup sweet chili sauce
  • 1 tablespoon sriracha adjust to taste
For the Bowl
  • 2 cups cooked rice white or brown
  • 1 cup shredded lettuce
  • 1 cup diced cucumber
  • 1 cup sliced radishes
  • ¼ cup chopped green onions

Method
 

Prepare the Shrimp
  1. In a mixing bowl, soak the shrimp in buttermilk for 10 minutes.
  2. In another bowl, mix panko breadcrumbs, paprika, garlic powder, salt, and black pepper.
  3. Remove shrimp from buttermilk and coat in the breadcrumb mixture.
Cook the Shrimp
  1. Heat vegetable oil in a large skillet over medium heat.
  2. Fry the shrimp in batches until golden brown and cooked through, about 2-3 minutes per side.
  3. Remove shrimp and drain on paper towels.
Make the Bang Bang Sauce
  1. In a small bowl, combine mayonnaise, sweet chili sauce, and sriracha. Mix well.
Assemble the Bowl
  1. In each bowl, layer cooked rice, shredded lettuce, diced cucumber, and sliced radishes.
  2. Top with crispy shrimp and drizzle with bang bang sauce.
  3. Garnish with chopped green onions.
