Ingredients
  

Main Ingredients
  • 1 lb Chicken thighs boneless, skinless
  • 2 cups Carrots sliced
  • 1 cup Celery diced
  • 1 cup Onion chopped
  • 2 cups Butternut squash peeled and cubed
  • 4 cups Chicken broth low sodium
  • 2 tablespoon Olive oil for sautéing
Spices
  • 1 teaspoon Thyme dried
  • 1 teaspoon Rosemary dried
  • 1 teaspoon Salt to taste
  • ½ teaspoon Black pepper to taste

Method
 

Prepare the Ingredients
  1. Chop the chicken thighs into bite-sized pieces.
  2. Slice the carrots, dice the celery, and chop the onion.
  3. Peel and cube the butternut squash.
Cook the Stew
  1. In a large pot, heat olive oil over medium heat.
  2. Add the chopped onion, carrots, and celery; sauté for about 5 minutes until softened.
  3. Add the chicken and cook until browned, about 5-7 minutes.
  4. Stir in the butternut squash, chicken broth, thyme, rosemary, salt, and pepper.
  5. Bring to a boil, then reduce heat and simmer for 30 minutes until the chicken is cooked through and vegetables are tender.
Serve
  1. Taste and adjust seasoning if necessary.
  2. Serve hot, garnished with fresh herbs if desired.
