Ingredients
  

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 2 teaspoon baking powder
  • ½ teaspoon salt
  • 1 cup whole milk (or almond milk)
  • 2 large eggs
  • ½ cup melted butter
  • 1 cup pitted cherries (fresh or frozen)
  • ½ cup sliced almonds

Method
 

  1. Preheat your oven to 375°F (190°C) and prepare a muffin tin with liners.
  2. In a large bowl, whisk together the flour, sugar, baking powder, and salt.
  3. In another bowl, mix the melted butter, milk, and eggs until smooth.
  4. Combine the wet ingredients into the dry ingredients, stirring until just mixed.
  5. Gently fold in the cherries and sliced almonds.
  6. Spoon the batter into the muffin tin, filling each cup two-thirds full.
  7. Bake for 20-25 minutes until golden brown and a toothpick comes out clean.
